New soba

Starting in early November each year, new soba noodles become available at soba restaurants in Norikura.
New buckwheat, harvested one to two months later, is fragrant and flavorful.
You can start with cold zaru soba (morisoba) and enjoy the aroma of the soba to the fullest without dipping it in the soup, or you can have it with hot kake soba in a delicious broth that will warm you from the inside out.
The soba noodles and broth vary from restaurant to restaurant, and they are all delicious.
It would be nice to spend a relaxing time in Norikura and visit some soba restaurants.

Preparing for winter

With winter fast approaching, households are preparing for winter by chopping firewood for wood stoves, making wild grape jam, and making pickles.
Preserved foods allow you to enjoy the bounty of the mountains even in the winter when crops cannot be harvested. In Norikura, there is a preserved food called "kizami," which is made by finely chopping various vegetables such as radish, carrot, and burdock and pickling them in soy sauce. The vegetables used for "kizami" vary from household to household.
At the Okamisan Diner inside the Norikura Tourist Center, you can enjoy chopped udon noodles. This dish features smooth, smooth udon noodles with a crisp, chopped texture and a refreshing flavor.
